WINEMAKING
1. Grapes de-stemming
2. Pre-fermentative cold maceration at 15ºC for 4 days
3. Fermentation in stainless steel tanks at controlled temperature (29ºC) for 28 days. Punching down and overpumping twice a day for an hour
4. Post-fermentative maceration with skins for 10 days
5. Malolactic fermantion in stainless steel tanks for 40 days
6. Ageing in 225L. new and second use french (100%) oak barrels for 14 months
7. Natural clarification inside their own barrels and barrel racking quarterly
8. Bottling without filtering
9. Ageing in bottle at least 24 months
10. Labelling and dispatch

COLOUR. Brilliant ruby-red colour, High cloak and light brick red tones
AROMA. Very complex aromas of ageing over a persistent background of liquorice, compoted black fruit (prunes and dried figs) and low brush. Complex spices, powder and mineral aromas at the end
TASTE. Structured and smooth wine. Wide and long. Velvety end with reminiscences of ageing

DRINKING TEMPERATURE. 18ºC
FOOD PAIRING. Stews and poultry, grilled red meat, roast suckling pig, foie gras, cured cheeses and cold meats
It is recommended to decant this wine 30 minutes before serving to appreciate its whole potential
